Pecan Cookies Recipe
Ingredients:
115g (4oz) Plain flour
50g (2oz) Cornflour
3/4 x 15ml tbs Baking powder
pinch of Salt
2 x 5ml tsp ground ginger
1 x 5ml tsp ground mixed spice
1 x 5ml tsp ground cinnamon
50g (2oz) Pecan nut, finely chopped
75g (3oz) Butter or Margarine
50g (2oz) Light soft brown sugar
25g (1oz) Dark Muscovado sugar
40g (11/2oz) Golden Syrup
30 Pecn nut halves, to decorate.
Directions:
1. Sift flour, cornflour, baking powder, salt and spice into a bowl. Stir on chopped pecans.
2. Cream the butter with the sugars until light and fluffy. Beat in the golden syrup, then mix in the flour and the nut mixture, Knead the dough very lightly on a floured surface until smooth.
3. Divide into walnut-sized pieces and roll into balls. Place on greased baking trays, spacing well apart. Flatten each balls with a fork and press a pecan nut half into the center.
4. Bake at 180C/350F for 15-20 minutes until just lightly browned around the edges. Allow to coole slightly, then transfer to wire racks to coole completely.
