Inverness Gingernuts recipe
Ingredients:
225 g flour
2 tsp ground ginger
1 tsp ground mixed spice
75 g fine oatmeal
75 g sugar
1/2 tsp bicarbonate of soda
175 g black treacle
50 g butter
Directions:
1. Put the flour, ginger, spice, oatmeal, sugar and bicarbonate of soda in a bowl and mix together. Melt the treacle amd butter in a small saucepan. Pour it on the dry ingredients and mix to a smooth dough.
2. Roll the dough out until about 0.6cm (1/4 in) thick. Prick with a fork and stamp out rounds using a 6cm (2 1/2 in) plain cutter. Place on greased baking trays and bake at 160C / 325F for 20-25 minutes until firm to the touch. Transfer to wire racks to cool.
