Devon Flats Recipe

Ingredients:

devon

225g (8oz) self-raising flour
pinch of salt
115g (4oz) sugar
115ml (4 fl oz) cream
1 egg, beaten
1 x 15ml tbs milk

Directions:

1. Mix the flour, salt and sugar together. Stir in the cream, egg and enough milk to make a stiff dough. If the dough feels at all sticky, cover it and chill until firm.

2. Roll the dough out on a lightly floured surface until about 0.7 cm (1/3in) thick, then stamp out rounds using an 8cm (3in) plain cutter.

3. Place on greased baking trays and bake at 220C/425F for 8-10 minutes until light golden. Cool on wire racks.

Makes about 24
